You can eat the whole sprout from root tip to leaf top.

Mustard microgreens is dense with protein, fibre, folate, calcium, iron. These microgreens are capable for fighting with diabetes and other lifestyle conditions. It also stimulates healthy hair growth. Mustard sprouts are packed with vitamins, minerals, and antioxidants. They’re high in dietary fibre and contain 30-35% protein!
